These flourless and sugarless oat pancakes are divine. Seriously. They're as delightful as a unicorn dancing on a rainbow.
I'm definitely not the inventor of these sorts of recipes and there are hundreds of them all over the internet but I really had to share this one. Perfect served with fresh fruit, ice cream, nuts or any dessert sauce.
(Makes approximately 8 small pancakes)
1 cup of oat flour (Simply blend/grind some normal oats into a fine powdery consistency...or just add the oats as they are if you prefer a textured pancake)
1 cup non fat milk (I use lactose free milk since I'm lactose intolerant and this is free from refined sugar)
1 egg
1 tablespoon of vanilla extract
3 or 4 tablespoons of Agave Syrup
1/2 teaspoon of cinnamon
Pinch of salt
Optional: For chocolate flavoured pancakes add cocoa powder to the batter and mix well before cooking. Nom.
Combine all your ingredients either inside a blender or mix by hand. (Some recipes call for all dry ingredients to be blended together first and then wet ingredients added. I have found it makes no difference to the outcome either way.)
Heat your frying pan. You can grease it with 1 calorie spray olive oil if you are watching your calorie intake. I used normal olive oil. Be sure the pan is hot before dropping small amounts of the mixture in and cooking for about 1 minute per side.
For perfect circle pancakes I used a cookie cutter. I'm a big cheat :D
Once cooked, serve and munch.
