Halloween Pumpkin Cookies (Sugar Free)

I've been celebrating Halloween since October 1st. I'm that person.

I love this season and I love Halloween so much. I'm really into the aesthetic of the holiday especially. Bats are one of my favourite animals and pumpkins are super rad.

Being someone who doesn't like a lot of sugar in food and generally avoids artificial sweeteners, I decided to make these alternatives which are great for anyone like myself or those who prefer more natural alternatives to sugar. You can of course use sugar free frosting/icing for these to make them 100% sugar free but I used regular since the cookies themselves are sugar free.

I also used light butter instead of regular to reduce the calories further.

Celebrate Halloween with these, they make a delicious treat! I am a sneak and I made these without telling my family they had no sugar in them and nobody noticed! I know, I'm a big sneak...but they are seriously yummy.

This recipe makes approximately 18 cookies.



 


Mix the plain flour, corn flour and butter in a bowl until the mixture resembles bread crumbs. 

Add in the salted caramel pieces, vanilla essence, agave syrup and dried fruit. Mix well.


The mixture should bind easily. Collect some mixture with clean hands, roll into a ball and then and roll out with a rolling pin. The thickness of the cookies is entirely your choice so roll until you are happy with the thickness.

 
Use a round cookie cutter to cut out circles.


Place the cookies on baking paper and on to a baking tray. Add to the oven at Gas Mark 4 for 10 minutes or until golden brown. Allow cookies to cool on the baking paper and tray.



Whilst the cookies bake, roll out ready roll orange icing and use the same size cookie cutter to cut out circle shapes.

Use the green ready roll icing to make a stalk or leaves for your pumpkins. 

Stick the icing to the biscuits using either a thin layer of Apricot jam or a very thin layer of warm water. (Brush on to the back of the pumpkin icing before placing on to biscuit.) Use either a small amount of jam or water to stick the leaves/stalk on top.

Draw a Jack-O-Lantern face using brown writing icing or writing chocolate (upside down triangles for eyes and the mouth can be as crazy as you'd like!).

Serve these delicious sugar free cookies at a Halloween party or with a lovely hot mug of tea! I also made mini pumpkins from ready roll icing as a decorative feature.
