*EDIT: I have learned since writing this post that Coco Pops are not vegan. Kellogs use vitamin D3 taken from lanolin (a type of oil derived from sheep) in their cereals which they do not have to legally state on their packaging. I am incredibly disappointed that I was misled by their products and of course will no longer consume them (to be perfectly honest I buy other brands of cereals that have no added vit D a lot more anyway). I will soon delete this post and create another recipe for these oat bars that are vegan! I am very sorry for the mix up and very sad about coco pops :( Keep an eye for the new post soon.
Let me just take a moment to say a big HELLO! I've missed you all so much. I've been MIA for a few weeks now due to my hectic university work. I finish my course next month and then graduate this summer so I'm really close to becoming a fully qualified special fx make up artist! So excited!
Today's post is another recipe and I know you all love my food posts! (Who can blame you? I love food more than pretty much everything.)
Going vegan meant I had to give up my beloved Coco Pops Cereal and Milk bars. They're essentially toasted rice bars layered with dehydrated 'milk'. And those are the one product I missed very much to the point I desperately wanted to create a similar healthier alternative to them. The good news is Coco Pops themselves are vegan. I know, it's fantastic. (You'd be surprised how many cereals are accidentally vegan!)
Enter my oat chocolate crispy bars. These can be made with or without dried fruit so if you're not a fan of that you can certainly omit it and turn these into an oat nut style bar instead. But I'm a big fan. So I'mma keep it.
This recipe makes about 10 bars depending on how thick you make them. If you prefer a sweeter taste, add a cup of brown sugar into the mixture alongside your choice of sweetener.

1 and a half cups of oats
1 cup of nuts (any you like!)
2 cups raisins
1 and half cups of coco pops (or rice krispies if you prefer)
3/4 cup of cocoa powder
1/4 cup vegan butter
1/4 cup of Sweet Freedom Fruit Syrup. (You can also use agave syrup or any vegan sweetener of your choice)
Add the oats and nuts to a blender and blend until they reach a consistency you are happy with. If you want a smoother bar, blend well. If you don't mind a rustic, chunkier look and texture, blend less.
Combine the cocoa powder and raisins into the oats and nuts.
Mix in the coco pops.
Melt the vegan butter and mix in the syrup. Add to the dry mixture and combine well with a spoon
Add the entire mixture to a brownie tray lined with grease proof paper (for easy removal) and flatten out.
Place in the freezer for about 25 minutes
Once set, remove from the tray and cut into bars or squares. These are delicious with a hot cup of tea or as a snack on the go.
