So I can't tolerate dairy. It makes me so ill and it causes me to have extremely bad periods. Avoiding it is a bit of buggery because sometimes it feels like it's in EVERYTHING.
Except this glorious creation. This is delicious Mac And Cheese and it has zero dairy in it. It is a bit fattening though, sorry.
A creamy, cheesy recipe that reminds me SO much of the Heinz tinned stuff it is insane. I created and made this recipe as a result of pms'ing pretty hard. #pmslife. It all happened a bit by accident but the results blew my balls off so far into space I HAD to share this recipe.
If you want to indulge in delish mac and cheese without the dairy then my friend you're in for a treat. It's also quick and easy to make for lazy bums like myself.

* Makes enough sauce for 1 person. Adjust amounts accordingly! *
❤ 2 or 3 heaped tablespoons of Sheese cream cheese (I highly recommend this brand because it has the cheesiest/best taste for this recipe)
❤ 250ml Hemp Millk
❤ 2 tablespoons of Corn Flour/Starch (Pre-mix the corn flour with COLD water - it goes lumpy using hot or warm water - before adding.). Add bit by bit to adjust thickness of the sauce.
❤ Pinch of salt to taste

❤ Add the Hemp Milk and Sheese to a pan. Heat gently and stir until the cheese has mixed in completely.
❤ Add the pre-mixed corn flour/starch mixture bit by bit. Stir until the sauce is as thick as you'd prefer. Keep in mind it will thicken slightly after it cools down.
❤ Throw in a pinch or five of salt because you're salty, baby.
❤ Stir into freshly cooked macaranoi pasta and BOOM.
❤ Extra Tip: Add a little English Dijon mustard for a delightful taste sensation! ❤
