I am heavily into baking. I have been for many years now. But since I decided to adopt more healthy eating habits I also desired to find alternative 'treat' food. This was down to multiple reasons to do with my health conditions and my general preference for healthier food.
There are thousands of 'healthy cookie' recipes out there. I definitely did not invent the recipe or the concept of healthier cookies. However in this instance I created this recipe to suit my own personal preferences and dietary needs. I am lactose intolerant so these are completely lactose free :)
If you're into homemade, soft cookies then you may just love these.
The main difference between these and regular cookies is that this recipe requires much less sugar, fat and is not made with traditional flour. Instead, they are made with 'Oat Flour'. 'Oat Flour' is simply traditional Oats (used to make porridge) ground up into a fine powder. I grind my oats using a hand blender and it works great. You can also grind them yourself in a mortar and pestle but keep in mind that this method will require a lot of arm work and will take longer.
The calorie content will vary depending on what type of ingredients you use and how big you make your cookies. For my recipe it's about 40 calories per small cookie :)
Of course, since they are made with Oats, they have a distinctive oat flavour. So yummy!
Ingredients
(Makes about 8 small cookies. For a larger batch just double up the amounts)
70g Oat Flour (Ground up oats)
1-2 tablespoons of brown sugar (2 for a sweeter taste)
1 teaspoon of baking powder
Handful of dark chocolate chunks
1 tablespoon of vegetable oil
1 teaspoon of vanilla extract
3-4 tablespoons of skimmed lactose free milk (regular milk if you're not lactose intolerant. Use any kind of milk you like.)
Recipe
Combine all of the ingredients together into a bowl. Mix well using clean hands for best results. Form desired size cookies with the mixture and put each cookie on to a baking sheet.
Bake for approximately 6 or 7 minutes on gas mark 6 (180-200 degrees or a moderately hot temperature). It is important not to overbake these cookies as they can go too hard if you do.
Allow the cookies to cool before serving.
